Alphonse Dolly

Calloused, damaged and carved by the handles of pickaxe and secateurs and reddened by the grape juice, Dolly’s hands do not balk at work. These fingers plunged into Sancerre soil taste of stone, dust and smoke.

Each of Dolly’s lines of hand tells the story of a working life. These seasoned fingers gently grasp the branches to bend them, taking great care not to break them and then attach them delicately to wooden poles called “pessiau” in Berrichon dialect. These hands, these fingers, from pruning to harvest, silently forge the taste of wine. Meticulous and precise work in the cellar gives crafted wines.
