Vineyard work :

Winemaking :
The grapes are pressed slowly to extract the best of fruits flavours. It is then fermented for 2 weeks between 13 to 18 degrees, a technique that ensures the conservation of all fruit flavours. It is aged on its fine lees until February in order to develop its intense aromatic powerness and lenght in mouth.
There are then successive tastings that determine the timing of the bottling of our Sancerre.
Tasting :
Pale golden colour, perfect clarity. Open, fruity and concentrated nose (Citrus and tropical fruits). Fine and expressive aromas in mouth. The balance of the taste appears when chilled.
Food & Wine pairing :
Very pleasant as an aperitif, it is also the perfect companion for seafood and fish such as salmon from the Loire or a Carpaccio of blue fin tuna. It will marry nicely with Perigord or Berry salads, chavignolaise salmon canapés or lentil croquettes with saffron and spices.
