Sauvignon blanc

Terroir :
Soil with mainly limestone.

Vineyard work :
Reasoned culture, cover in grass, no grasskiller, disbudding, green harvest, work on the soils

Vinification :
Immediately after having been harvested, the grapes are pressed slowly in order to extract all the aromatic power. The musts are then musted naturally thanks to the cold. Then, the alcoholic fermentation takes place with natural yeast of the grapes in temperatures included between 13°C and 20°C. This allows us to conserve all the fruits aromas and the attractive minerality linked to the grounds. The biggest sediments are sorted out to only keep the finest in order to make an strong ageing on fine lies until the bottling process, that is what gives richness and structure to the wine.

Tasting :
The nose expresses white flesh fruits and has a good floral side. The mouth is chiselled with a wonderful homogeneity from the beginning to the end. A lots of length in mouth with minerality. The cuvée delivers a superb richness and is surprisingly generous. Great typical and elegant white wine !

Food and wine pairing :
The wine should be served between 8 to 12°C. Fish and seafood, scallop Carpaccio and goat cheese.
