Our Sauvignon is grown on the hills southeast of Sancerre and thrives on clay-limestone and flint.

The grapes are pressed slowly to extract the best fruit. It is then fermented for 2 weeks at temperatures of 13 to 18 degrees, a technique that ensures the conservation of all fruit flavours. It is aged on its lees until February and developing its full bodied taste and long finish.
There are then successive tastings that determine the timing of the bottling of our Sancerre.
Pale golden colour, perfect clarity.
Open, fruity and concentrated nose
(Citrus and tropical fruits).
Fine and expressive aromas in mouth.
The balance of the taste appears when chilled.
Very pleasant as an aperitif, it is also the perfect companion for seafood and fish such as salmon from the Loire or a Carpaccio of blue fin tuna. It will marry nicely with Perigord or Berry salads, chavignolaise salmon canapés or lentil croquettes with saffron and spices.
