Sancerre cuvee Pauline red
Pauline, my great-grandmother founded this vineyard in the early twentieth century and it seemed natural to pay homage to this little, enterprising woman who always tried to help. For her, we developed a Sancerre on coming from flint – clay earth and vinified in 300l oak barrels.
The grapes for "la Pauline" are harvested late and by hand only. The yield of these plots is intentionally low and our annual production is 1500
to 2000 bottles.
On clay – flint soil at a place called
“Désert de P’tit Bannon” (Bannon’s Little Desert),
this poor and arid ground gives the Pinot Noir
a complex spice nose and a
good, long aroma in the mouth
of black fruits such as blackcurrant and
blackberry.
This Pinot Noir needs full-bodied and spicy cuisine.
Serve with small game, marinated or braised meat.
