Sancerre cuvee Pauline white
Grape 100% Sauvignon.
Pauline, my great-grandmother founded this vineyard in the early twentieth century and it seemed natural to pay homage to this little, enterprising woman who always tried to help. For her we have developed one of the rare "flint Sancerres" fermented in acacia barrels and barrels, according to the traditions of my grandfather, Paul Cantin known as Robert. It’s still a secret! He was a cooper, and after the war, shortages of certain timber species required working with little used woods, therefore he manufactured acacia barrels used for his own wine. I have great enthusiasm for tasting wines which were made in this fashion, so I chose to draw inspiration from his life to give birth to this wine dedicated to my ancestors and the enjoyment of taste buds!
The grapes for "la Pauline" are harvested late. The yield of these plots is intentionally low and our annual production is 1 500 to 2000 bottles.
The years go by and are not alike ... We produce this wine according to strict selection criteria. Only a few vintages are for sale.
It's the time spent in acacia barrels which gives it unparalleled complexity.

Our vintage is a perfect accompaniment for fish, or pan-fried or Carpaccio of scallops, or simply a veal stew ... it will also amaze your taste buds with the divine mix of it and foie gras.
