A Vintage from our Ancestor !
A half-century ago, Robert Cantin was cultivating a few hectares of vineyard in the village of Thauvenay and was making his own barrels. Nicknamed “Robert”, my grandfather -fine local dialect poet- knew like no one else narrate stories of our region with his nice accent from Sancerre.
Winegrower treating his vineyard and his wine with love and respect, may this Cuvée pay tribute to him!
The name of Robert Cantin is anchored in the history of Sancerre since he was a famous storyteller of regional stories and wrote many berrichons (local dialect) poems and tales of Saint-Jean. Besides, the folk group winegrower of “Sabotée Sancerroise” paid tribute to the grandfather by editing a book “pour pas qu’ça s’pard” (“Never forget!”). Andre Dubois, president of Sabotée Sancerroise devoted some lines on Robert Cantin in preface of work “Robert Cantin is in my opinion the berrichon teller speaking the “Sancerrois” in an unsurpassed way”. He had been going to Paris, however, his dialect was not distorted, to hear him, they would think that he has never left his countryside and that he always worked his vineyard. Fine poet, moreover, he was more than a minstrel. He has put into the few pieces that he composed all his heart, all his rural sensitivity blended with his strong nature of courageous man.

Grape variety :
100% Sauvignon blanc

Terroir :
Soil with mainly limestone.

Vineyard work :
Reasoned culture, cover in grass, no grasskiller, disbudding, green harvest, work on the soils

Winemaking :
Immediately after having been harvested, grapes are slowly pressed to extractthe best of the fruit. The juice then ferments 4 weeks under controlled tempraturesfrom 13 to 17 degrees, a process which ensures the conservation of all fruit aromas. It lies on its fine lees until February, where it develops its richness and its length. We then use successive tastings to determine the best moment to bottle our Sancerre.

Tasting :
The nose expresses white flesh fruits and has a good floral side. The mouth is chiselled with a wonderful homogeneity from the beginning to the end. The minerality make last the finals. This Sancerre "Les Pierblancs" delivers a superb richness and is surprisingly generous. A great Sancerre, typical and elegant !

Food and wine pairing :
The wine should be served between 8 to 12°C. Fish and crustaceans, scallop Carpaccio, goat’s cheese and especially Crottin de Chavignol, a PDO cheese from Sancerre.
