Grape variety : 

100% Sauvignon Blanc


Terroir :
Soil with mainly limestone.

Vineyard work :
Reasoned culture, cover in grass, no grasskiller, disbudding, green harvest, work on the soils

Winemaking :
The grapes are pressed slowly to extract the best of fruits flavours. It is then fermented for 2 weeks between 13 to 18 degrees, a technique that ensures the conservation of all fruit flavours. It is aged on its fine lees until February in order to develop its intense aromatic powerness and lenght in mouth.
There are then successive tastings that determine the timing of the bottling of our Pouilly-Fumé.

Tasting :
This wine presents a lovely light golden colour and a brilliant robe with fresh and rather subtle fruity nose. Thanks to the flinty soil, we notice the particularity of the "pierre à fusil" taste with a hint of minerals. The wine combines freshness and roundness.

Food and wine pairing :
Delicious with fish and seafood, it is also very good paired with goat cheese like the famous "crottin de Chavignol" and other specialities of the area.
