The Menetou Salon White and Red wines are made with Sauvignon Blanc and Pinot Noir grapes respectively. They are harvested on clayey-calcareous soil and a carpet of tiny shells called "oeil de poule" (chickens’ eye).

Grape variety : 

100% Pinot Noir.

Terroir :
Clay and limestone soils on carpet and small fossilized shells called "chickens’ eyes".

Vineyard work :
Reasoned culture, cover in grass, no grasskiller, disbudding, green harvest, work on the soils.

Winemaking :
After harvest, the grapes are destemmed and put into vats for a 2 weeks maceration. Regular tastings are done to follow the tannin evolution. Once the juice is extracted, it undergoes malolactic fermentation.

Tasting :
Wonderful red rubis color. This wine is supple and perfumed. It displays ripe red fruits and candied fruits.

Wine and food pairing :
This supple wine can be paired with poultry, white meats and cheese.
